Baking Adventure: Whoopie Pies

Since my current passion is baking, I have decided to start a recurring segment called “Baking Adventures”. I am by all means only an amateur baker still learning how to bake goodies and treats that’s why I’m calling it “adventures”.  I’m hoping to grow as a baker and be able to create tasty treats for my family and who knows, maybe in the future for other people who’s willing to eat them!

For my first “adventure”, I have tried Chocolate Peanut Butter Whoopie Pies! As much as I wanted to make actual whoopie pies from scratch, I was a little press for time and ingredients. First of all, it’s hard to really get all the time I want with a 9-month old around. Second, it was a pretty hardcore snow day so we were pretty snowed in to go out and buy ingredients. So… I used a chocolate cake mix that I had in the pantry.

I did buy an actual whoopie pie pan though beforehand from Michael’s. Not the cheapest thing but I was still super excited nonetheless since it’s not an item I could find in regular stores like Walmart.

I actually made a mistake too when baking the pies. I accidentally added an extra half cup of butter that’s why they are a bit dense with the wrinkles all over but it’s okay. They were still delicious!! I also normally am NOT a peanut butter fan. I’ll eat it once in a while but not my preferred type of dessert. My husband,  however, will die for peanut butter. He LOVES it. So he was pretty happy that I was giving a peanut butter filling a go. You know what  though? This peanut butter buttercream was actually pretty delicious! It wasn’t an overwhelming taste of peanut butter (which is probably why I liked it) and it wasn’t too sweet either. It was a nice ratio of the two. Since the cakes itself wasn’t too sweet as well, the total sweetness of the whole sandwich put together was just enough.

So I considered this a success.  A success for me is when my husband is happy and that I actually like it (especially in this case since I’m not a peanut butter fan).  I can’t wait to try these again with different fillings!
